I'm going to sorta, kinda, deviate from a knock off Olive Garden Gnocchi soup.
Extra spinach, adding zucchini and bare minimum gnocchi. Fresh strawberries. I found a really good deal!! Oh, and I have the last of pineapple I cut up. |

Late this afternoon, leaning into the early evening hours, I'm going to have baked butternut squash, a small garden salad, and a few of the oatmeal cookies I made recently. *yummmmm* :)

I brought home a small spinach and feta cheese pizza. Thin crust. I added cut up salami and baked it on my pizza stone. Red peppers and parmesan cheese when it came out. I had 3 tiny pieces. The other pieces will be lunch for 2 days. Tried some grapefruit sparkling water. Not too bad, I might add. |
Last night was spaghetti and meatballs from Rock ‘n’ Jenny’s and it was good.

Oh, wow...tonight I had ramps and spaghetti!
I went hiking today in search of ramps and morels...no luck with the morels, but tons of ramps. I picked up some cremini mushrooms and sauteed them with the ramps in olive oil and butter...dumped the pasta in the skillet when it was finished, and topped it with lemon zest and parmesan cheese. I will have a few more meals out of it, and it was meat free to boot! I got some great photos of a deer that stood and stared at me as I approached it, plus I saw an oriole. Plus, an awesome workout, as the park was in the driftless area of WI. |

I am making burgers and sausage with roasted veggies. I am roasting the veggies with rosemary from my garden. I made a big pitcher of ice tea with peppermint to drink.

Tonight, I'm having an small garden salad, and a small bowl of kidney bean, carrot, ginger soup, which is homemade. I'm catching up on my water intake, tho. By dinner time, I will have polished off nearly two gallons of water. :hk2:

I may have to make sugar free oatmeal cookies again. What I really want to do is keep hammering away on making a salad dressing that tastes like roast beef, since I dare not eat meat. <<<<<<~~ Organic salads are soooo good. :eyebat: |

I was craving a watermelon salad so that's what I had. I had baby arugula with some frisse, crumbled feta, watermelon chunks, a couple TBS of watermelon juice and a smidge of balsamic with a tiny bit of diced fresh mint. Water to drink. Delish!

Tonight it will be Moussaka, a green salad and breaded garlic mushrooms with a dollop of sour cream dip on the side. Dinner will be a little early tonight as its one of my favorites and I can hardly wait. :drool:

Salad..... organic romaine, organic blackberries and raspberries, walnuts, Chia seeds, Flax seeds, kidney beans, and Sesame Tempe strips, with my own homemade dressing (Tumeric). And those crunchy Sesame Everything salad stick toppers. So tasty! :)

I ate too much and I'm not happy about it.
It was delicious, though. I had another watermelon salad but added mild jalapeno juice for some depth. That was fine but then I pulled out the ice cream. Oh my. I'll be paying for that on the scale tomorrow. |

I got busy working on chores so there is only time for cereal tonight. Better than nothing.

I had a smaller watermelon salad just like before but this time I put some of the actual jalapenos in the salad and it was really good. The feta wasn't quelling my protein craving so I had two small bbq drumsticks minus the skin and some gummy bears for dessert.
