I may have to try it this way sometime..maybe easier than what I do now.

currently, I pour the beaten eggs in a medium heated pan...slowly cook on a med to low heat (more on the low side so it cooks but doesn't brown) pulling the egg into the center allowing the uncooked egg to move to the outside. I continue this until it is almost fully cooked.

then put pre-cooked veggies...and cheese

I fold it in the pan...wait a few seconds...flip wait a few more seconds to allow the rest of the egg to cook.

add cheese on top and plate up

The only drawback I can see here is..... '2 pans'

I am too lazy for unnecessary washing up. :blink:


Beef stew tonight, lots of veggies no dumplings though :sigh:

Spicy butternut and carrot soup in the slow cooker for today and tomorrow.

Last night's dinner....

grilled pork chops
mac & cheese
and cucumber & tomato slices

as for tonight, it's either going out to Red Lobster with friends, or I'm throwing a Stauffer's lasagna in the oven and opening a bag of salad :)

it is a little late in the evening, so it is a toss up between mac n cheese or french toast (Italian bread) and scrambled eggs. hmmmmmm both equally simple...... :)

I was at work forever today and I am tired

2 Avocados with lime and salt
a couple grilled chicken strips

Now to bed to get up and do it all over again, love end of the year cost reporting so festive :blink:

Nuked one of those individual serving peach pies from the freezer and glass of milk. Then 1/3 of a Rice Krispy Marshmellow treat. It was insisted it be split and shared 3 ways. ;) I don't think they even tasted it much.
