Princess 07-19-2019 01:02 PM

I think we're gonna have a big yummy salad which should offset the nachos I had for lunch...right? Lol

GeorgiaMa'am 07-19-2019 06:17 PM

Throwback Ravioli. It's a childhood comfort food thing.

girl_dee 07-19-2019 06:35 PM

Poke’! Thank you Daddi!

nycfem 07-19-2019 06:46 PM

Tonight the husbutch and I went out for an anniversary dim sum dinner. We shared: veggie peanut dumplings, turnip cakes, veggie spring rolls, sticky rice, and veggie shumai. It really hit the spot! Oh, and we had popcorn at the movies. We saw "The Farewell" which was quite good.

JDeere 07-19-2019 09:07 PM

I had half a pound of boiled shrimp, half a pound of cold peel and eat shrimp, with boiled potatoes and corn. One big beer and a sweet tea.

GeorgiaMa'am 07-20-2019 07:24 PM

- yellow crookneck squash casserole
- applesauce

nycfem 07-21-2019 07:48 PM

Went out for sushi with my dad for a belated father's day dinner. Had:

3 brown rice sushi rolls (all vegetable) with ginger and wasabi: one avocado, one kampyo, one oshinko

miso soup

daikon radish salad with carrot ginger dressing

So delicious, all of it!

Kätzchen 07-21-2019 08:38 PM

Pan seared Tuna, over a bed of fresh spinach with basil leaves, sliced mushrooms (the dark brown type) and Miso Orange dressing.

Water to drink.

Lemon Tart for dessert (a thin slice of it -- OMG, it was delish!).

Georgia? Is the Crook Neck Squash casserole a specialty dish you make or one that your mother makes? I would love to know how to make it, it sounds simply scrumptious. :balloon:

Please and Thank You!

Just in case she doesn’t see this, she mentioned the casserole and how she made it in the instant pot thread. :bunchflowers:

Orema 07-22-2019 09:12 AM

Last night was baked lemon-pepper wings with asparagus and riced cauliflower.

Tonight will be leftovers.

I will be happy to give you the recipe! It is my mother's.

5 pounds yellow (crookneck or straightneck) squash (you can also throw in some zucchini if you don't have enough yellow)
1 sweet onion (Vidalia or Texas type)
3 Tbls. Butter or margarine
2 slices bread
8 oz. shredded cheddar cheese (cheese is optional, or you can use less if you want)
salt (less if you use cheese, more if you don't)
black pepper - as much as you like
4 eggs

Chop and steam the squash and onions together in a small amount of water. Drain, but do not drain dry - leave some liquid. Add butter to melt, and bread to get soggy. Mash squash mixture until bread is thoroughly mixed throughout and you can't see any bread lumps. Squash will still be kind of lumpy, this is fine. (If you want a finer texture, blend the mixture with beaters until as smooth as possible.) Mix in cheese, salt and pepper.

In a separate bowl, beat eggs. Add a small amount of squash mixture to eggs and beat to temper them so they won't cook when adding to the squash mixture. Do this a couple more times. Then pour the eggs into the squash mixture, and mix everything together.

Spray a 2 quart or 9 x 13 casserole dish with Pam. Pour in squash mixture. Bake at 350 until golden brown and souffle is set, about 45 minutes to an hour.

Enjoy!

I think, and who knows, since it is raining buckets and I have choir after work. But I think that when I get home I will have Ñoquis with Marinara and maybe some sauteed mushrooms. YUM! Cherries for snack.

easygoingfemme 07-22-2019 04:43 PM

A salad of pickled beets, black olives, cucumber, and garbanzo beans.

Princess 07-22-2019 06:21 PM

Tonight I grilled a t-bone and we had a side of tomatoes and cottage cheese. for dessert a slice of Louisiana crunch cake. It was pretty amazing!

FireSignFemme 07-22-2019 06:44 PM

Louisiana Crunch Cake that does sound good.

I had fresh apricots for dinner and now I'm thinking about a couple slices of Dave's thin sliced Killer Bread, toasted and with butter for dessert.

nycfem 07-22-2019 07:01 PM

I ate two salads:

(1) cucumber and plum

(2) vine ripe tomatoes, hearts of palm, artichoke hearts, black pepper, salt, garlic, balsamic vinegar, fresh basil, cucumber

Both were delicious!

GeorgiaMa'am 07-22-2019 07:02 PM

Little snacky things:
- chicken salad on crackers
- ham salad on crackers
- sweet baby gherkins
- grape tomatoes

RebelDyke 07-22-2019 07:54 PM

KFC tonight

It's Pete's fave and he has been such a champ letting me work 73 hours last week....that's not including my homework!

Kätzchen 07-22-2019 08:53 PM

Thank you Georgia for sharing your mother's recipe! I can't wait to try it out!

Tonight, I am having a small bowl of Asian salad mix; topped off with sliced pickled beets, sesame seed salad toppers and slivered almonds. I am binging on Miso Orange dressing, though.

Later on tonight, my dessert will be having stuffed basil leaves; which are filled with a non-dairy cream-cheese type filling that is mixed with minced smoked oysters, minced Kalamata olives and a dash of liquid smoke.

Strawberries on the side.

Sparkling, chilled spring water to drink.

Princess 07-23-2019 01:48 PM

Tonight I am grilling chicken and corn on the cob. Will probably slice up a fresh tomato also. And so looking forward to it I am so starving today!

Martina 07-23-2019 04:19 PM

Low carb cheese quesadillas
Diet Coke

Halo Top caramel macchiato ice cream

RebelDyke 07-24-2019 12:14 PM

I am OPEN FOR SUGGESTIONS!

Princess 07-24-2019 02:49 PM

Due to some unforseen circumstances we had Wendy's for dinner last night. So tonight I am going to throw the chicken in the oven and make spoonbread and Mac and cheese.

GeorgiaMa'am 07-24-2019 07:24 PM

- A roast beef sandwich
- A cherry danish

FireSignFemme 07-24-2019 08:23 PM

Carefully measured portion of imitation crab chunks. There are a lot more carbs in this than I imagined there would be. Small garden salad topped with grated cheddar cheese and homemade ranch dressing. Snack cup of no added sugar diced pears. French Roast coffee with whipping cream used as creamer in it.

RockOn 07-24-2019 08:51 PM

large glass of ice cold unsweetened soy milk

I'm still too hot from mowing the lawn after work and it is too late in the evening anyway. There is a nukable spicy vegan thai noodles dinner in the freezer but if I eat spicy this late and go to bed, I will have horrible nightmares ... plus all the thrashing around I do scares the dogs to death. I know because when I finally am able to wake up, all of them are up against the wall looking at me bug-eyed. :( Have frightened some women over the years too.

PlatinumPearl 07-24-2019 09:17 PM

Dinner...

For dinner I put together a nourish bowl with quinoa, roasted sweet potatoes, cauliflower, carrots, kale, 1/4 avocado, pumpkin seeds, hemp seeds, hummus and lime.

Kätzchen 07-24-2019 09:32 PM

a small organic garden salad of Romaine leaves, sliced avocado, a small sprinkling of chilled lima beans and butter beans, chilled chikn-tenders (zero meat, all plant protein), smothered in vegan Caesar dressing, with sunflower seeds and slivered almonds. Two celery sticks filled with organic freshly ground peanut butter. A small glass of orange juice. Chilled spring water, on the side.

Later, I plan to have a small carrot cupcake (no frosting), topped with a scoop of warm, fresh from the oven, non-dairy Vanilla, sugar free custard...with a sprinkle of nutmeg.
