Cottage pie, from the old Moosewood cookbook. It's a pie filled with fine chopped veggies tossed with egg and cottage cheese and topped with sour cream and dill. Bakes up nice and it's super comfort food. Perfect for my daughter coming home today from being gone all summer :)

I subbed a few items/steps- I had a wa-hoo special pork loin roast that I marinated in orange juice with your other ingredients for 18 hrs (ziplocked). Baked in 1/2 the marinate for 2 hrs-I did baste with the drippings while in the oven. With a side of Mandarin-Orange Salad- |
Dinner tonight was not great but it was passable.
I used two woks and, with no oil, I stir-fried bell peppers, onions, and carrots in one, and then in the other I stir-fried tofu and cabbage. Then I put them together and added .25 of a cup of Gochuchang sauce (bibimbap / Korean style sauce). It seemed to really help to press the tofu of all water before cooking, as recommended in this thread. And it was so easy to do. The bell peppers were watery and over-powering, I think. Not sure the carrots worked that well either. It might be cool to do all cabbage and tofu. And maybe cook onions separately in EVOO and add them. Cooking the veggies separately and without oil seemed helpful. They browned nicely. Skipping the riced cauliflower seemed good as well. Afterward I had a Rawmantic vegan vanilla bar. All in all, even though the stir-fry was meh, it was edible and healthy and filling, so I'm pleased enough. |
Dessert for Supper
It is very humid and terribly sultry tonight. I just got home after spending 3 long hours in traffic, lol. I'm not too hungry, but I am sipping on room temperature water, guzzling a Dr. Stevia, and will promptly eat some vegan coconut non-dairy ice cream (the whole pint) which is more like a solid type custard type confection, in the flavor of salted caramel.
I had a big Asian sesame salad for a late lunch, with sesame salad dressing, so I feel like I had something reasonably healthy. Heck, the Dr. Stevia is fairly healthy since is doesn't impact A1c/blood sugar issues. The Salted Caramel non-dairy ice cream is protein rich, so I think I will be okay, for now. I recently bought a 'rainbow' pack of Dr. Stevia 'soda' products, so it's one a day, just like a vitamin, until they're gone. I don't ordinarily drink soda type products at all, so this is just a test run on a new stevia based drink product. |

*~^~*~^~*~^~*~^~*~^~* As for me, I went out with a friend and had Indian which is always yummy. :) |
We are having family dinner tonight instead of Friday due to a few conflicts. Broccoli quiche and salad for the adults and pasta and hopefully some grilled chicken for the boys.
|
I grilled steaks and made potato skins. It was my first time making them. Everything was good but next time I'll just make baked potatoes. Less time consuming.
|
Probably scrambled eggs

I had eggs too! I just made mine into an omelet with some mushrooms and spinach and cheese. It was yummy and low key. |

Tonight I had: - a garden salad with creamy Italian dressing - lasagna (Yes, it was a little heavy in this heat, but I've been craving marinara sauce.) |
I had my easy dinner. Actually a truly easy dinner would be take-out :phonegab:
I had a bowl of frozen/microwaved black bean soup with onions, sour cream, and cilantro. Then I had some tofu "egg" salad (Someone asked if I get this kind of thing from a deli and the answer is- I get it from a natural health food store). I had that with pickles that I use like a spoon. Well, a spoon I take a bite out of! Then I had... you guessed it- a Rawmantic vegan vanilla bar. It was not an amazing dinner, but it did the trick. |
Mission Figs, organic carrot juice which I diluted with some water (it's expensive to buy), and a few celery sticks filled with organic peanut butter.
Just a light supper. Tasty and filling. |
Cobb salad again
Diet Dr. Pepper I'm hungry again, but nothing I have sounds good. |

Leftovers...
When you live by yourself a pan of enchiladas lasts a long time! I also had a lime popsicle. :) |
My daughter and I both had Tempeh bacon lettuce and tomato sandwiches. She had hers on nice local made chewy bread. I had mine on gluten free "rye" bread that is okay.
|
I dunno. Maybe I should skip it. It's already almost 9 and I had a late lunch.
|
- grilled chicken with sauteed mushrooms and onions on top, and a little parmesan
- steamed rice - applesauce |
Dinner
Baked pork chop, steamed corn on the cob, iced tea.

I followed up with my idea from last night (trying a stir-fry with almost all cabbage as the veggie with the tofu). It was edible but not great; however, I have some ideas for improving it next time.
I dry-wokked (no oil) cabbage, lots of scallions (I think they taste great with cabbage generally), and tofu (pressed out much of the water thanks to this thread's advice). Then after cooking, I added .25 cup of the red pepper paste and mixed. The problem was that it was too watery. And I think that came from the tofu. Even though I pressed it, it probably still generated a lot of water. When too much water can't be gotten rid of, the veggies come out more steamed instead of dried / browned (the latter of which I prefer). It also takes soooo long to cook when it's watery. I felt like I spent a good hour stir-frying cabbage. So, yeah, I guess next time I will try cooking the tofu separately from the cabbage and scallions. For dessert I had a Rawmantic vegan vanilla bar and it really hit the spot, especially after eating so much *essentially* steamed cabbage. One way I love to stir-fry cabbage is with a combo of peanut butter and soy sauce. OMG, so good. Cabbage picks up flavors very nicely. |

I think the taste of quinoa and red lentil pasta is similar to the taste and texture of rice pasta. I prefer wheat-based pasta but it's not good for my arthritic knees. |
Tonight for dinner I made gnocchi with a mushroom alfredo sauce.
When I say "make" I mean I cooked frozen gnocchi, opened the jar of alfredo sauce, and sauteed the mushrooms. I'm not Martha Stewart, but it tasted pretty good. :) |
Mel ordered sushi!!!!

My stir-fry was frustrating tonight. I dry-wokked (no oil) cabbage and scallions. I skipped the tofu altogether. So it worked very well not to have the water from the tofu- big difference. The cabbage cooked really well. I decided to go with a mixture of curry, peanut butter, and soy sauce to mix with it at the end. I added WAY too much curry. It was really overpowering. Also, I ran out of natural peanut butter and had to use BB's regular peanut butter. Both those things were frustrating, especially the excess curry.
Then I had a Rawmantic vegan vanilla bar which hit the spot. I find it quite therapeutic to pull apart a cabbage. I recommend that activity. |
Stir fry chicken with a little bacon, hatch chili, yellow pepper and zucchini. I put some Asian wing sauce on top.
Cheesy broccoli. Handful of dark chocolate covered almonds. Icy water ❄❄ |
I had pico de gallo with chips, water and an ombre cake. The ombre makes the cake fancy and who doesn't like fancy cake?
