Homemade chicken noodle soup J made to tide me over until they get back from their trip this weekend. She brought me some earlier and it was so good I only ate ½ though I wanted to eat it all, just so I'd be able to enjoy it twice. I told her that so she made me a huge thing of it. :eating:

We are going to see Downton Abbey, and we are bringing (sneaking in) Veggie Delight sandwiches from Subway. I will have cheese, but Pete will not, because dairy does not agree with her delicate constitution.

White beans and smoked ham shank. Seasoned with onion, celery, sage, bay leaf, rosemary, parsley, chicken stock, pepper. Delicious.

I had about 6 chips and some pico de gallo and then I moved on to some chicken nugget balls and then I started picking at the dill pickle chips and then I gave up on any pretense of eating a "real" dinner and had peppermint ice cream. Sweet tea to drink. I'll have water later.

I found asparagus for .67 a pound. So this week I'll be enjoying asparagus all ways! Tonight, I found this recipe for chicken asparagus casserole,
topped with mozzarella. This morning I made egg bites with asparagus.

I was at work late. Hmm.... and I work in a school but it's new this year so I am practically living there to get my paperwork done! I ordered in an Impossible burger. Gosh, the Beyond and Impossible are okay to me but almost too much like meat for my taste. I like a classic vegan Boca burger. I think I'll order in Beyond next time because they had both on the menu. I've had Beyond but I want to do a direct comparison (everything same except Beyond vs. Impossible). I also had the classic combo of onion rings and french fries. They were great. Oh, and a diet root beer.

I love the chorizo crumbles! I have used them for tacos but this time I used "the regular" .... I wanted to try the regular. I hadn't had them. The regular is also yummy. :)

well...I made two chicken breasts out of it. If you can make it before my dinner time, I'll be happy to serve that to you!

It's my fav foods as well. It was super easy to make and it will definitely be made again. You can find the recipe, if you google Chicken Asparagus casserole. Just look for that picture.

It was really good and fit right into my keto diet🎯

Dinner out with colleagues, what didn't we have. There were dumplings, egg rolls, soup, and my favorite fried duck. We ate for three hours and I am stuffed.

I know I probably should not eat supper late at night, but I don't have to get up at 0-dark-thirty anymore, and my work schedule is so much more saner (LMAO -- I show up shortly before noon, nowadays). :eyebat:


I'm finally hungry now. Not sure what it will be, though.


Maybe a bowl of hot cereal or better yet, maybe eggs over easy and some Garlic nan with melted 'cheese'. Kind of like a late night sandwich raid of sorts.


Cup of hot herbal tea for dessert and carrot juice with supper.

I made tater tot casserole for dinner last night. Again I used Morning Star crumbles. I'm starting to love those things. And of course the casserole had cheddar cheese on top!

From an old family recipe. Supposed to be shepherd's pie but it's not -
Hamburger browned dumped into a casserole dish with can of Campbell's cream of something soup mixed in. Usually celery or mushroom with all the rubbery mushroom pieces removed. In this case cream of chicken because that's all that's on hand. On top of that a can of drained green beans. On top of that seasonings. Then topped with prepared instant potatoes, can't use fresh potatoes has to be instant, then smothered in grated cheddar cheese. Mom never topped with cheese saying it was already rich enough. Yeah well if there's any life left after nuclear war assuming we're both the same amount of healthy, barring any unforeseen accidents, illnesses or being murdered in cold blood, who's gonna live the longest fat me or thin her during the ensuing famine? Oh well, on second thought in the aftermath of a nuclear war, that might not be such a blessing...

Just came back from shopping so it will be either chicken, cod fish, salmon or striploin steak. Have to think on that one unless someone comes to the door and I offer them my menu LOL.

I tried ordering the Beyond Burger from the same place I got the Impossible burger and definitely prefer the Beyond, though neither of them impress me. I still say a vegan Boca burger wins me. Oh, and I had sweet potato fries, always so good.
