I maowed down all of the Sun Dried Tomato Wraps I had on hand for the wraps I make with veggies. So I'm going to open up a different bag of wraps: Rosemary & Olive Oil wraps.

I am going to go make a wrap right now and have something to eat, since I waited until real late to have supper. Maybe just a half of one, save the other half for lunch tomorrow.

Cantaloupe (cubed) on the side.

Water to drink.

And a few sun dried figs for dessert. The Sierra type of fig. They're pretty yummy. :)

I am glad I watched enough episodes of Kitchen Nightmare to learn a great way to cook steak!!!

It may just get me fired up enough to start cooking in the kitchen!

So.. tonight's menu... definitely steak

Thanks to you and Firegal :) Your postings on air-fryer meals always sound so good and encouraged me to get another one.

I’m still learning how to use it. I made some shrimp the other day and they came out rock hard after 8 minutes! It cooks really fast. Next time I’ll keep an eye on them and will cook them for less time.

So glad I tried it again. I no longer need my toaster oven.

How does one eat just three french fries. I don't understand at all.

I was eating someone else's fries and hadn't ordered any of my own.

* * *

For dinner, I had:
- catfish
- cole slaw
- hush puppies

Still no fries of my own.

So we went out to eat tonight, the first time eating out since Covid started. We went to the Marina, a restaurant that sits on the river and has outdoor seating. We ordered a "small plate" of fish tacos which equals 2. For entrees, I went with an ahi tuna steak and Bevi went with crabmeat sliders. The food pricing had gone through the roof since we were last there. The service was slow and the food disappointing to say the least. Thinking hibernation isn't so bad after all. On the way home we did stop at the grocery store to buy veggies and burgers to throw on the new grill (Nexgrill....similar to a Blackstone) that Bevi bought me for my birthday. We are both looking forward to giving that grill a shot this weekend.

This week my coworker brought me yellow squash so I tried this recipe. Turned out yummy. I had it over rice. :)

Darn it! Now I wish I did take some of the fresh squash another co-worker brought in. Shoot

I stopped after work to pick up storm supplies. Things that don't need to be refrigerated. Fruit cups, bars, peanut butter, sandwich thins and some bottled water.

I came home with tequila lime wings and lemon cookie ice cream. That's dinner.

I made sun tea with lemon pound cake tea bags. It's so good cold. Tastes like a vanilla tea!

Orema 08-22-2020 11:26 PM

Burger on low carb tortilla with a small green salad.

GeorgiaMa'am 08-23-2020 12:27 AM

Orema 08-23-2020 06:03 AM

Think I’ll debone a chicken breast, cut it into some chicken medallions, and make a coconut-Thai curry. Wish I had some fresh basil, but I’ll have to do without.

If it's hard to keep fresh herbs, maybe try a paste that can be refrigerated and last longer?

This one is easily available and is made from organic basil.

As for me, last night I had lentil soup with tiny club crackers dipped into the last of the chicken salad. Water followed by pink lemonade to drink.

Mopsie 08-23-2020 12:58 PM

My coworker also gave me more eggplant so I made this recipe as well. Super yummy! 😋 And it's low carb!

I've tried a version of this before - it may have been the same brand and it may not. I keep it in the refrigerator at my mom's house. I was really pleased with it. It's nice to keep around. It's basically just chopped basil in olive oil.

I love a good cannoli - especially when they have chocolate chips in them. So delicious!

This recipe was really easy - probably would be great with zucchini too (in case someone shows up with that). :chef:

Orema 08-24-2020 02:25 PM

Tonight I'll have the chicken medallions in a lemon/caper sauce with a salad then a popsicle for dessert.
