Stuffed bell peppers. I got a really good deal – red, yellow and orange were selling for less than the price of green. So I'm skipping green and using some of the red tonight. Don't really need much else with this standalone dish but I'll probably have some seedless watermelon for dessert. Maybe a glass of warm milk or cup of hot tea afterwards depending how full I feel.

Tonights plan is roasting
Roasted Portabello Mushrooms Big salad Yam/Sweet Potato "Pie" for dessert I will throw in yams and heads of garlic for later use while the 'shrooms bake With the roasted yams I make something that to me is reminiscent of pumpkin pie*, mash the yam add appropriate cinnomon, ground cloves, etc and chopped walnuts on top for texture with a bit of butter for richness. *Given that I haven't had actual pumpkin pie in about a decade, it works for me.. :eating: |

- a cup of cherry juice I'm still hungry but nothing sounds good - except for Kelt's sweet potato pie. |

Going for a walk along the river a bit later, once it warms up a few degrees. There's a "Shwarma" take out place nearby so hope to sit by the river and enjoy my huge, overstuffed chicken shwarma sandwich there. |

I had Seeds of Change Organic 7 Whole Grains rice with grilled mixed veggies, spaghetti squash, pickled asparagus, steamed edamame (no salt) with water to drink and 2 Halos for dessert. I was hungry tonight! I didn't have any down time at all during work today.

Wakame Seaweed Salad & Baby eggplant sauteed with green onions, garlic bits, and other seasonings she uses. I added a cup of wild grain & brown rice. Perfect.
