Last night I tried a recipe that a customer mentioned. Lazy lasagna is a new favorite! It only has three ingredients and is super easy to make. Yummy!

Ruffles have ridges with homemade ranch dip and store bought garlic bread. The bread was pretty good for store bought but once you have J's everything else pales by comparison.

Last night was a large French fries from McDonalds with a glass of Pinot Grigio.

Northern White Bean Soup: presoaked beans, filtered water, sea salt, fresh tarragon leaves, fresh sprig of rosemary, one smoked ham hock (which I remove after the soup is finished simmering, I use it mainly for flavor), and organic vegetable broth. I also chopped up half a head of organic cabbage and half a stalk of organic celery. It smells delicious. Today's soup is a rather big batch of soup, so I can warm up a cup of soup, all week long, for any meal on the go or for supper-time.
Water to drink. A cup of hot herbal tea, before bedtime (Sweet Dreams tea by Tazo). |

Same thing I had for brunch...maple glazed ham, mashed potatoes, black eyed peas, brined beets and greens. I had a Halo and apple chips for dessert and water to drink.

I was hungry yesterday. For dinner was leftover black-eyed peas, greens, and a tortilla with pulled pork.

I had a tiny piece of maple glazed ham, mashed potatoes, black eyed peas, greens, a Halo, an apple, a snack bag of dried figs (strangely enough they don't have a dried texture), a snack bag of apple chips and two glasses of water. Not sure if it's stress eating from today's political circus in the Capitol and the races in Georgia or something wacky going on with my hormones, but it was pretty darn tasty.

I had a black bean burger on an Artesano bun, lightly toasted with romaine, avocado mayo, dill pickle chips and mustard. I also had a couple of honey crisp apples and some pepper jack crackers. Water to drink.

Bread and butter – lots of it, homemade! J is going out of town for the weekend so she brought me some to tide me over till she gets back as a nice surprise. I'm particularly impressed because this is white and there's a lot less room for margin of error with white, especially plain white, bread. Actually with many of the dark breads you don't even have to knead the dough. Anyhow it is the best home baked bread I've ever had in my 5+ decades of living. And that speaks a lot of her talent because this is only her third attempt ever at making bread and her very first making white. I've been to county fairs where women who'd been baking for decades and decades won ribbons and still after all the rave reviews didn't turn out bread like this. Though even if it had been terrible it would have been good to me because it was so thoughtful of her to think of me before heading out of town. I'm so fortunate to have such a nice daughter-in- law. :)

I love plain, white bread. And you're right, FSF, it is not easy to do well. Mine does not consistently turn out the way I want it, and I've been baking bread for almost 50 years.

I made Mexican Rice Casserole tonight for dinner and it was SUPER yummy and SUPER easy. It will therefore go in the favorites section of my recipes notebook!

I had a small piece of sweet chili chicken breast, a salad quinoa, a few bites of a chicken-walnut-balsamic salad, grilled mixed veggies and water. That was all fine and good but then I got the munchies so I had a 1 ounce bag of plantain chips and a Halo then a honey crisp apple followed by more water and then some apple vinegar kettle chips. They were my downfall and so easy to keep nibbling on!
