Tonight dinner was honey balsamic pulled pork sliders with grilled asparagus and watermelon. It was super delicious!!

lunch is the new dinner for me...so....
I stopped for veggies at my produce place and had their hot bar...I ate... salmon putanesca chicken caccitore and mixed sauteed veggies and now Im cooking for my long weekend... brown rice, and black beans....which I will throw together with onions, peppers and garlic in some olive oil and maybe some white wine....add some veggies....maybe make salmon on the side....but Id be happy with the rice and beans... :) |
Sauerbraten and spaetzle. First time I'm attempting to make it...so I hope it turns out ok. So far, it's looking (and smelling) delicious!

Chicken n rice made with poached chicken breasts and a mish mash of rice...black japonica, Bhutanese red rice, and some wild rice thrown in because it was there.

I had grilled chicken, shrimp and broccoli and cheese casserole, white rice and pineapple Pico de Gallo, croissants and mango tea. It was like dinner and dessert! All while watching the Spurs game! Woo hoo!

I have to do something with 2 good sized eggplant that I bought...Im open to suggestions!
Ive already made some pasta with eggplant and froze it for work meals... I was thinking of maybe making eggplant lasagna...where by you cut it in wide slices and stuff it with lasagna things...cheese...spinach...mushrooms...olives? with a nice simple sauce....I have fresh garlic thats begging to be used...and could procure some nice fresh basil.....mmmm |
