Stuffed mushrooms. So good.
We stopped at the grocers after my friend’s PT appt and stuffed mushrooms were on sale. I usually chop them into quarters and add to pasta, but I was so hungry I ate them as they were and it hit the spot. I waited too long to eat and felt better in minutes after the first bite. I bought enough for tonight so I may add them to the pasta I have. Had pumpkin seeds and dark chocolate for dessert. |
We’re having a hodgepodge of leftovers and sides: pinto beans, store-bought mini enchiladas, avocado, and cilantro lime rice.

I made Mexican cornbread casserole for the first time. It was good but seemed a little dry. I'd make it again but figure somehow to moisten it. I also made a huge pot of Brunswick Stew and is most awesome! Can't wait to eat it tomorrow night

I made a ham and bean soup that was so delicious! I should’ve made the cornbread casserole, too, that Blade made. it would’ve been a perfect pairing!

Last night was steak and brussel sprouts. It was okay, but the sprouts were over cooked and mushy. Tonight will be baked fish with green beans and a salad.

A good size cod filet, green beans steamed and paresienne potatoes. Ice tea.

Last night was gluten free spaghetti with a white sauce and a green salad.
I made some frozen speghetti with a red sauce, but it had way too much anchovy paste. I had to throw it out and just made spaghetti from a box I had in the pantry. |
I have a short day at work because we have our huge awards banquet tonight!
Last year our franchisee threw a lovely dinner for us all (Chinese) but I think this year it’s going to be Italian. I’m hoping it will be lasagna…green salad…and Tira Misu. 😘 |
More like late lunch. I put the frying pan on the wood stove and filled it with chopped red and white cabbage, red onion, sliced mushrooms, shredded carrots and lots of butter! Perfect pregame meal!

I made delicious vegetable soup in the crockpot last week, and I froze several portions. I made fermented lemons a few weeks ago, and the tangy flavor brightens up the flavor, since, you know, crock pot recipes often need a little something. I’ll add baked tofu, and I’ll think I’ll serve it over farro rather than rice.

Last night was cauliflower and cheese, leftover fajitas, naan bread, green salad. Pumpkin seeds and a hard seltzer (tangerine) for dessert.
Tonight will be steak and some veggies and probably a popsicle for dessert. |
