Summer evening meal
I'm going to make a spring greens salad. I have some roast beef slices that I will add to it. Mmmm, and some home grown tomatoes she brought over to me the other day. Cup of split pea soup a little later. Lots of ice cold water to drink. |

Got my hands on 3 lovely little lobster tails so steamed them in white wine and had long grain & wild rice with steamed broccoli . Really tasty. Ice tea.

Yummy stuff for my meals
I’ve been making a vegetable ‘hash’ by using organic rainbow beets and other vegetables like green cabbage, parsnips and carrots that I sear in evoo, until the vegetables are tender; then I usually do eggs — sunny side up, until they are softly cooked until nearly over done, seasoned with organic crushed rosemary, over everything. Sliced avocado, on the side. Maybe a very small piece of sourdough naan. :balloon:

Last night I had some Virginia BBQ delivered to my hotel. Brisket, pulled chicken and ribs with coleslaw and veggie. Not the best I ever had, but not the worst either.

I haven't wanted to cook anything in a week. It's all been take out. Tonight I cooked.
Creamy lemon garlic pasta, with sliced chicken thigh. Topped it with fresh basil and some tomatoes. I found this receipe while scrolling thru FB. |

I made my own 4th of July potluck plate.
I had at home.. Left over rotisserie chicken Coleslaw Watermelon Cherries Picked up Potato salad Guacamole Had ice cream later Brought back a sweet memory..we always made homemade ice cream. Many times we cranked it, taking turns. And then the electric one came into play. |

I went out with a friend tonight. I had a pork wet burrito. She had Ruben egg rolls. Ahuh, a Reuben sandwich made like egg rolls. Next time, I'm getting that!
We talked for 3 hours! And we are meeting for breakfast on Friday. |
Tonight was the first night since September 2020 that I had ice cream. I found a keto ice cream at Market Basket and decided to give it a try. Well, two of them. I couldn't decide between mint chip and strawberry. The flavors are limited but both were decent enough for me to check out the salted caramel and peanut butter next time. Or maybe I'll get the peanut butter and mix it with the chocolate. They are still calorie laden but the sugar is nil so that is fantastic.
Besides ice cream, I had a few baked chicken nuggets and an Asian salad from SaladWorks. First drink was carrot juice and second was tangerine juice. |

Me: Mexican sushi roll. I have no reason why it was called that. But it was excellent! Her: Dragon roll. And of course we ate off of each others plate. Last of the beer drinking of the day. |

My husband and I have both had Covid this week and so family friends and neighbors have been bringing food over.
I guess we’re having leftovers! It was also delicious so I’m sure it’s going to be even more so second time around Pulled barbecue pork and cornflake Cream cheese potatoes |
I had a Southwestern salad from Salad Works, baked sweet potato wedges, both chocolate milk and tangerine juice to drink and some low sugar gummy bears for dessert.

I made a casserole a few nights ago that I’ve been dining on for dinner. I’m having the last cup of it tonight for dinner after work. It’s made with high protein rotini pasta, refried organic black beans, organic chickpeas, diced celery, crushed elephant garlic, fresh lemon and grated lemon rind, sun dried tomato, and crushed rosemary… with a creamy white Caesar white sauce.
I’m also going to have zucchini fries too, that are drizzled in olive oil, with sea salt and Parmesan cheese and baked until crispy. Recipe ideas found here: https://hungryhappens.net. Stella is Italian and she takes her cooking seriously. I love her devotion to eating healthy foods that are low carb, high protein and seriously delicious. I’ve taken to only drinking Spring Water that is bottled in glass bottles from southern Oregon (very tasty water from natural springs). |

Hmmmm, something I came up with tonight..
Sauted onions with fresh spinach. I had this box of Indian inspired tomato soup, so I added a splash for a sauce and topped with a chorizo sausage. Quite tasty! I turned a half of an avacado into a simple smash. Green onions, dollop of sour cream and sprinkle of hatch chilies. No carbs. Well a little bit when I added the Kahlua to my half cup of morning coffee. A pre dinner cocktail. |
