Last night, I had mesquite chicken breast with sweet potato fries and 'antioxidant' veggie mix. Birch beer and some gummy bears rounded out the meal.

Thick and chunky marinara sauce a brewing in the crock pot today.

Caramelized onions
green peppers
Celery
chunky mushrooms
Italian sausage
tomato sauce
various spices..heavy with the 'slap your mama' spice conoction!

Pasta will be made later

Tonight's dinner was super yummy and very much comfort-oriented. Beef fajita strips with loaded mashed potatoes and mac 'n cheese. WW ice cream bars for dessert.

Have been buying those 64 oz. jars of Delmonte
grapefruit pieces that are in the grocery store's cooler section. I love these - so refreshing and tasty! Since I discovered them, I do not like to be without having a jar in my fridge.

That depends on what you define as dinner. If you count what I ate at 3pm as dinner, then I had beef fajitas, mac 'n cheese and loaded mashed potatoes again. If you count what I ate at 7pm, then I had peppermint ice cream and a honey crisp apple.

Meatloaf...the most versatile food on the planet. Yesterday I poured a can of vegetable soup over a slice of it, today I poured a can of mushroom soup over it.
You'd hardly know it was the same meatloaf I've been eating all week.

last night...

I had some chicken that needed using up...and it was frozen so I boiled it to defrost it and partly cook it...

Then de-boned it and put it in the wok with some basil olive oil (Yum!) I let it finish cooking slow...then considered the chicken stock...I threw some rice in it and it came out omg good.

Strangely enough, I had been watching an awful but funny movie (Bad Words) and the character mentioned "curry hole" and...well...I'm subjective to my environment...so I threw some curry and tandoori spices in with the chicken. I had some frozen veggies so I threw those in with the chicken also, and added water to steam them...it made a nice accidental sauce with the chicken juice and curry spice.

Threw it together on a plate and it was dinner. And I was either REALLY hungry...or it was REALLY friggin good...my friend said prolly a little of both lol :sunglass:
