BUT I am so sorry to say that evidently you can only add water so many times before the broth loses its mellowness and a lot of its flavor.... so I deboned my roasted chicken and sacrificed the skin and even the meat on the back to see if I can mellow this broth out again. I think I might put another onion in also, and maybe some garlic to improve the flavor.

Now I want chicken.
