Tonight: Grilled (in evoo) Italian 6-cheese sandwich with garlic aioli spread and dark red truffle beet chips. Delicious.

A few nights ago I went out for dinner with a friend. We had fish and chips with homemade tartar sauce and cabbage slaw. So good.

Tomorrow is my turn to return the favor: an early afternoon lunch at country side food cart venue. I’m treating us to Hawaiian 🌺 Grilled Pineapple and chicken spears with homemade macaroni salad. Divine.

Well, I was given two flounders. Whole ones! And that totally scated me
How do I cook them? So I took to Google

I ended up wrapping them in foil and putting them on the grill. Little olive oil, garlic, ciltanto, onions and sliced lemons. Not too bad if I say so myself. Well, except for the bones!! Lol

Made a little veggie packet for the grill. Now that's the way to go. Yummers.
Grilled pineapple as a treat.

I’m keeping it rather simple today: I made a Lavish wrap with avocado, and pan seared veggies in evoo, and a drizzle of garlic aioli. Delish!

I made homemade cupcakes for dessert: Pistachio-Pineapple-Blueberry-Pecan breakfast loaf-type cupcakes. No frosting. Just healthy goodness. ☺️🎁❤️

Short version: Last night I had Burger King because I ruined the dinner I cooked and the burger was good.

Long version: I baked a frozen-to-oven turkey breast and it took forever to cook and was dry. The gravy that came with it tasted horrible. Like it had too much turkey drippings and not enough seasoning. The cabbage burned (yeah, I cooked it in the air fryer again) and the off-brand, out-of-the-box stuffing was okay but it wasn’t good enough on its own. I forgot to get cranberry sauce.

I was left with a messy kitchen after I cooked everything and tossed it out. I was gonna have a can of tuna, but I wasn’t gonna clean up all that mess with only a can of tuna for a reward, so I got a burger and fries from Burger King.

It was quiet and slow and they took their time making it. They made it without ketchup and with extra pickles just as I like it and it even looked like the burgers on tv. The fries were cooked to perfection.

I quickly cleaned up my messy kitchen with a smile and enjoyed my burger.

Throughout the day I watched tv and talked to my family who was at the Lion’s football game having fun and being loud.

In all, it was a good meal and a good day.

Had a bowl of Marketside Zuppa Toscana soup and crackers. The soup was tasty after I added a little cream and salt.

Tonight I’ll have tuna salad or egg salad on a warm tortilla.

I had a couple of chunks of goat cheese that was rolled in cranberries and pecans. Sliced some rosemary flatbread and dipped that into olive oil and balsamic vinegar. A sliced apple and topped it off with a chocolate chip cookie. Happy Holidays!!

Best Butch is coming over and we will grill ribeyes. Along with sweet potatoes and black eye peas. Pre-grilling there is smoked fish dip and a buffalo chicken dip.

Last night I had Butter Chicken. I picked it up ftom Aldi's. It was actually good. I also had a glass of wine. Best Butch has a neighbor who works for Total Wine, and brings home freebie samples. It was a New Zealand Sauvignon Blanc. It was ok, I'm definitely not a connoisseur of wine. That style of wine is not my cup of tea..lol

But was my cup of tea, my favorite flavor of ice cream...had one of these before bed. Sweet dreams for me!

Lately I've been stuck on gluten-free pasta tossed with butter, lemon, and rotisserie chicken. I’ll have the same tonight or some soup with a small salad.

I bought a rotisserie chicken and made a huge pot of stock/broth from the bones, cartilage and skin. Will use the meat for soups, salads, tacos over the next couple days.

A rotisserie chicken is 5-6 bucks in my neighborhood and a whole fresh chicken is 15 bucks.

A small portion of a lemongrass chicken Bahn Mi sandwich, a shrimp salad roll with peanut sauce, and a small bowl of Pho which had cilantro, green onion slices and jalapeños. Lots of hot herbal tea and water.
