After grabbing my salad from Subway, I went home at lunch today, to add the veggies to the crockpot. Let me tell you my soup is smelling YUMMY! I thought it was gonna be more like a stew... but I guess I added too much water/stock. That's ok... I'm more of a soup person anyway. Tomorrow, the seasonings will have soaked in and it will be even more tasty!

I still haven't ventured off to look for holiday receipes yet.... but have been kinda kicking around different options in my head. Ever since Thinker mentioned Pumpkin Pie and Sunshine mentioned Sweet Potato Pie, I've got those flavors on my brain. I might have to break down & see if I can find at least a sugar free or fat free pumpkin creamer for my coffee

Just from being back on track for the last 3 days, I can already tell a difference with how my body feels. When I eat crap or don't drink enough water, I feel sluggish. I guess the saying is right, "you are what you eat". Luckily, I'm back on track & feeling 100% better already.... mind & body!

Your soup sounds terrific!

Since several folks have mentioned pumpkin type things, I'll share one of mine.
Winter squashes are on my list of "Human Rocket Fuel" items, so I eat this all the time.

It's approximate since I use metric;

Cooked, mashed Butternut squash, 1 cupish
Agave nectar or honey, 1-1.5 teaspoonish
Cinnamon, lots (or maybe pumpkin pie spice )
Salt, just a pinch

moosh this all up and make it hot

Top with walnut pieces 1/2 ounce (15g)

Side note on the cooked squash thing;

steamed, too squishy
baked, too much work/electricity

I just nuke'em whole, poke it a couple of times with a fork. On high 6-8 minutes, let it sit 15-30, flip and repeat. Scoop out the good stuff, stays great in the fridge for days.

I've been known to forget it was sitting in the micro for half a day at a time. No harm done. Very forgiving stuff this.
Also good lots of other ways, herbs and such.

THANK YOU for this! I'm definitely gonna make this as an alternative to my mother's favorite candied yams loaded with butter & marshmellows!

Question for the gormet cooks out there....

I've read somewhere that some people mash califlower as a substitute for mashed potatos. Lemme hear your thoughts and/or comments on this! **see, more holiday options**

OMG i kid you not, i JUST made this!! We just had this with dinner!

Yes you boil a head of cauliflower, I cut mine up first, add butter and cheese and mash it up with a mixer.

I am on atkins so allowed all of this but you can try substituting whatever, I also threw in some fresh garlic and onions for a really yummy flavor, it is wonderful!

Been there, wouldn't go there with the relatives. Try it on yourself first. Popular for real low carbers. It's not bad, definitely not a potato. Of course, I'm no gourmet.

Cauliflower puree is great! Add a little Parma romano and you have a great dish. Lower carbs and higher in fiber.

Lots of alternatives

I'm not a fan of the cauliflower puree although perhaps I'm not seasoning enough.

I have done a combination of potato, onion and turnip, which is interesting...but the other great alternative is celery root (also called celeriac). Peel and boil until tender, just like potatoes.

As an alternative to mashed potatoes at holiday dinners - I do roasted sweet potato and parsnip. washed, peeled, cubed, parboiled for 5-7min., roasted with a little olive oil and seasoning in an oven at 375F for about 30-40minutes.

I've tried it and loved it - however, if you're expecting it to taste like potatoes you'll be disappointed - it's yummy though! I put a little 'I Can't Believe it's Not Butter', Mrs. Dash, and garlic in it... MMMmm!
