It's 8:30 pm and I am just now getting home to cook dinner for myself. I'm starving!
I am going to grill some chicken thighs, and while those are cooking I will chunk up a head of cabbage, some carrots and onions and roast those in the oven. I have some leftover green beans too.

Tonight I had a 6" roast beef sub from Publix that I brought home & put fresh spinach and sliced tomato on. Served with a couple of slices of avocado and some pickles.
I have had a free range hen brining in salt water all day that I am going to roast here shortly for tomorrow's dinner.

Nature inspired my dinner tonight...
I visited the "flowering bridge" in Lake Lure after hiking Chimney Rock today... There was a whole heap of rosemary...so...I stole a little bit...not with any intention...just Cuz I like the smell...but on the drive home I decided to cook with it so... I baked some red potatoes and chicken in butter, garlic and rosemary....added frozen veggies in at the end...salt and pepper...it was amazing....and it made the house smell so good. I can still smell it hours later.... I'm such a good cooker sometimes....lol Neopolitan ice cream with Hershey's syrup for dessert....for example...

made some lentil soup with ham simmering for a couple of hours. This is the kind of soup when you go out for a bit and come back you can smell the soup through the front door before opening it!! for dessert I made some drop biscuits and strawberries with whipped cream!!
