I made lunch and dinner one meal since I have to work tonight.
Sauteed chicken breast with fresh zucchini, summerbsquash and red pepper slices. Fresh minced ginger to give it a zing and some coriander and cumin for flavor.

I had a Christmas miracle a bit early...
I got home from a nice walk with the dogs, was preparing to make lunch and suddenly realized that todAy was my renewal date for my car insurance. .gif "Say What?") I skipped lunch and hopped in the car to get there. As it is, they are having some kind of promotion and they had free pizza...so I had two slices of little Caesar's...while driving to th next thing on my agenda...

I finally got around to making the chickpea salad.
I added celery salt, 21 season salute, mayo and a hard boiled egg. I still have to find some onion in the yard somewhere...but it's chilling so I have time to forage. Gonna have it on honey wheat toast.
