This recipe would be for those that really like sweet potatoes. I saw a recipe in a new cook book I got and it was for sweet potato soup. I thought I'd give it a try and see what it tasted like. I can honestly say, it was different, but I liked it and so did R. It was really simple to make.
Sweet Potato Soup 1/2 cup chopped onion (1 medium) 1/2 cup chopped celery (1 stalk) 1 clove garlic, minced 1 tablespoon butter 1 sweet potato, peeled and cubed (about 2 cups) 2 cups chicken broth 1/2 teaspoon ground nutmeg 1 1/2 cups half and half or light cream 1 tablespoon maple syrup sour cream (optional) In a dutch oven, cook onion, celery and garlic in hot butter over medium heat until onion is tender but not brown. Add sweet potato, broth and nutmeg, bring to boiling.Reduce heat; simmer, covered, 20 minutes or until potato is tender. Remove from heat, cool slightly. Transfer mixture to a blender or food processor. Cover and blend or process until smooth. Return all soup to the dutch oven. Stir in cream and maple syrup; heat through. If desired top each serving with sour cream and nutmeg.
