I was thinking about how my diet has changed even from a year ago. Thought I'd share:

A year ago, this is what my food intake would have looked like:

Breakfast:
2 Tylenol
Redbull
1 cup of coffee with full-fat creamer

Midmorning:
2 Diet Cokes

Lunch:
Pizza or something fried
One of those giant Otis Spunkmeyer cookies
a huge Diet Coke

Mid Afternoon:
2 more Diet Cokes
some kind of candy bar

Dinner:
Chicken fried steak with gravy or a heavy carb-loaded meal with very few veggies
More Diet Coke or Red Bull

Before bed:
Ice cream and Diet Coke

Sleep: 3- 4 hours a night.

Jeez. No wonder I felt like crap!

Now my intake is like this:

Breakfast:
an occasional 1/2 cup of coffee with sugar-free creamer
water
oatmeal (no sugar) with fruit or yogurt or smoothie

Mid morning snack:
more water
some kind of fruit (usually grapefruit, pluot, or apple)
v8 (spicy hot or low-sodium!)

Lunch:
some kind of lean meat (usually chicken), a steamed green veggie, and a salad
more water

Afternoon snack:
either a Fiber One bar or fruit or carrot sticks
more water

Dinner:
Lean meat (super small portion) 2 steamed veggies (mostly green unless I do squash) and a dinner salad
more water

I do an occasional after dinner snack of a sugar-free banana popsicle or grapes (small portions!)

Sleep: 5- 6 hours a night!

I haven't taken Tylenol for knee pain in over 4 months. I haven't had a Diet Coke in almost 6 months. I'm exercising regularly.

Big change! Feel great!

Today's menu so far...

Breakfast:
  • black coffee
  • 1 slice whole wheat toast with tuna salad

Mid-morning snack:
  • last of the cantaloupe...about a cup
  • greek yogurt

Lunch (right now):
  • Salad with....
  • organic baby greeens
  • tomato
  • half a cucumber
  • 1 hard boiled egg
  • about 1/2 cup garbanzo beans (have rediscovered my love for these on salad)
  • small amount of avocado...maybe 1/6 ?
  • homemade cider vinegar and EVOO dressing

For dinner tonight I'm making homemade soup....stock I made from the ham bone (baked ham for dinner Sunday night)....with onions, canellini beans and chunks of the ham. Yummy....and legumes!

Hey Rockin,

I remember reading a ways back there that you're on a really low calorie diet....like 500 or 600 a day? If so, I wonder if your metabolism is responding by hanging on to each calorie. I'm no doctor or dietician, but I've heard that that can happen with ultra low calorie diets...

So amazing! I could tell over the past few days that you are really in the zone. You're doing fantastic!!!

I *love* the spicy V8 but really insist on the low sodium for obvious reasons. So I throw in 6-8 drops of hot sauce to the low sodium to get my kick!!

Hi Jo
Im on a low carb diet but recently I desided to keep a record the calories in the food I eat,It came out to 500 to 600,im not trying to do tht it just works out to that ammount.Im not hungry so I gess im geting enough.Mostly im eating salads, veggies with lots of grilled fish, chicken or even red meat.I stay away from potatos except for sweet potatos wich I love but am careful not to over do.You my well be right about my body being in save the calories mode. Im going to add some to my menue to see how that works, corse when I go to the gym I work out like there wont be a tomorrow,I may be over doing that as well.

So, I joined Gold's Gym and as a treat to myself I got a trainer for 6 weeks. In my first week I have managed to do 5 days of Cardio and a ab workout (X2) from HELL!!! Loved it! My cardio workout consisted of 2 days of the treadmill for 45 minutes each and I threw Jacobs ladder in there for 10 on one of those days. So far I have tried the Sh'bam class, didn't care for it as much as Zumba. Zumba ROCKS! The third cardio class is called Body Jam HOLY HECK! Loved this class as much as Zumba. So there it is... There are a couple of other classes I want to try such as the Gentle yoga and the swim fitness class. All in due time. Tomorrow we will do a brief rundown of the ab routine then we will be moving on to the rest of the body.
Also here is what she has said about eating...I get up really early some days, trust me this is not by choice as sleep is often elusive for me, even when I am dog butt tired...

SNACK
Fruit/nuts

BREAKFAST
Carbs & Protein

SNACK
Fruit/nuts/veggie

LUNCH
Carbs & Protein

This is when you should cut all carbs out.

SNACK
Fruit/nuts

DINNER
Protein & Veggies

Also this week we are going to discuss supplements. Right now we are not counting calories just looking at what I eat.

Keep up the great work everyone!

Sleep is absolutely essential and not just any sleep but good sleep. I use to be fine with 6 hours but as I get older I fine that I need at least 8, 9 is perfect. Getting enough rest and sleep is very important in weight loss and over all health. I have periods where I just can't sleep. Every other month for a few days. Also when I keep Mia, my granddaughter, I wake up with each toss and turn. It throws me off cycle and effects me for days. I listen to audios at night to help me sleep deeper.

I have decided that there are a few things I most likely will not give up:

Crusty Artisan Bread
well made cheeses- goat, blue cheese, guyere and the like.

Therefore I think I will spend this winter mastering the art of bread and cheese making. I have a vitamix so I'm going to purchase organic grains and grind flour. Practice making really healthy but yummy fresh breads. I can buy raw milk in NC, or so I'm told so I'll practice making cheeses. I've done both bread and cheese before. This time I'll take it to a whole new level.
