- the project was one helluva a year, it's pretty much a visual blog.

I can highly recommend spanakopita; an unctuous mix of spinach, feta and (lots of ) garlic just can't fail to be tasty - the trick is to squeeze out as much liquid as possible from the spinach/greens or your filo pastry just disintegrates ...I was inspired to have a go making it after trying a few versions at a 'Continental Market' in Lincoln (uk)
