I'm less of a foodie and more of an eater.
Looking forward to what everyone comes up with. In the meantime, I used to love going to this restaurant when I lived in WA. They have their own brewery on site and made a most delish warm spinach salad, which I don't think they carry anymore. Wherever I go I can find a dish that I will enjoy and miss. Funny how many times spinach salad has come up as a topic in conversations with friends. Must be the dressing? A lot of people use bacon in the dressing. I do a spinach salad with soy, rice vinegar, fresh ginger, fresh garlic, a little toasted sesame oil and a little sugar. Then again I m in love with Asian flavors so that dressing could top many dishes and I would likely enjoy it!

One of my favourite food memories is the first time I visited my brother in Europe, he was living in Frankfurt at the time, we went to the corner grocer and bought bread, cheeses and meats. They eat that for breakfast.
My favourite was the Quark cheese (with herbs) on their wonderful baguette bread with a slice of salami. Oh my god food is so much better in Europe. I was hooked and now whenever i visit my brother he knows to have Quark and Salami for me. Yummy That and Lamb in Barcelona, any restaurant. I don't know why they do it so well, but they do. Ok, and the ice cream from the street vendors in Vienna. And the chicken donair at the Amsterdam train station. And the salami and spinach pizza anywhere in Germany. Have i mentioned how much I like (good) food? And Europe has some of the best. Although my mom made awesome pyrogies.

I know right! When I was in Italy I was shocked at how good the bread and cheese was. Could not understand why everything tasted so much better over there. Soon learned that growing things with no chemical assistance and using milk that actually comes from cows and goats that graze on the hillside, was the answer. Fascinating. Then again I could live on bread and cheese.

Foodie here but also on the SUPER healthy side of things. Portobello mushrooms with herbs, spinach and light cheese, broiled, delightful! We made a pasta dish this week, small beans, pesto, mushrooms, spinach, tomatoes, angel hair and some parmesan arregiano, it was SO good and light. Fun thread!

Seems like a lot of people are looking for healthy and delicious ideas for meals so please bring those ideas. Mushrooms make a really nice flavor and texture delivery to any meal. Broiling sounds like a great idea. Grilling is always my first choice but I cant always do that. Amazing how some good cheese can kick up a dish yes? That and hot sauces. Hot sauce freak here. A bottle of Tabasco does not even last me a week these days. I need to buy it by the quart I guess. lol

Sun - thanks for the spinach salad idea. I'll definitely try that one. One of my all time favorites is my Mom's chicken and dumplings! All from scratch and definitely not the healthiest, but they sure do stick to your ribs!!

Did you catch my post where I asked for a recipe for chicken and dumplings? No one replied! I would love a recipe. That spinach salad dressing idea works with any vegetable really. The flavors are just awesome and you can tweak it and make it your own, in a different way each time you make it. Add orange juice, grated fresh ginger, lemon zest..the possibilities are endless.

I love food...new tastes, new textures and flavors...
I will eat anything - especially if I do not have to make it. My top restaurants at the moment: One Twenty Six in Iowa City. It has a beautiful duck entree (cooked to order) with spargus and jasmine flavored red potatoes. Lovely from beginning to end! Also has my favorite pulled pork cuban sandwich. Devotay, Iowa City, has great tapas! Locally owned and supplied with local organic produce. Best fish tacos in town. Light, buttery and crispy. Lincoln Cafe, Mount Vernon, IA - has an incredible filet mignon. Locally farmed beef and vegetables. I can go on... but ... if I smell Feijoada... it's all over. My soul melts. |

OMG a good Cuban sandwich. Wow. It has been a while. One of the great things about having access to local farms is that farm to table cooking is like nothing else. Glad to see so many restaurants going in this direction and getting back to the way that things were done back in the day. If you go back and read some of this thread you will see that I am a fish taco freak. How does your place serve them? Corn or flour tortillia? What do they top it with? 4 skinless, boneless chicken breast halves/ pressed or sliced to no more than 1/2 inch
1 egg maybe two for more batter beaten 2/3 cup dry bread crumbs - can use any bread chopped small 2 tablespoons olive oil 1 lime, juiced 6 tablespoons butter 1 teaspoon minced fresh chives can use more to taste 1/2 teaspoon dried dill weed Coat chicken the with egg, roll in bread crumbs or chopped bread. let dry on a wire rack it can take 10 minutes or so. Heat olive oil in a large skillet medium heat. Cook the breasts for 2 minutes per-side. Remove to broiler or baking dish depending what you desire. Squeeze in lime juice. Pour melted butter over chicken add chives and dill let broil or bake until center of breast is white. Use any sauce and drippings as a starter for a sauce. Best served hot. enjoy

![]() ![]() No Bake Samoa Cheesecake Yield: one 9 inch cheesecake Ingredients Crust 2 cups Oreo crumbs (from about 20 Oreos, leave filling in the Oreos)) 1/4 cup butter, melted Filling and Topping 1 cup coconut flakes, divided 24 oz cream cheese, softened 1/2 cup sugar 1/4 cup brown sugar 1 tsp vanilla extract 1/2 tsp coconut extract 1 cup vanilla wafers, broken into pieces 1/2 cup caramel sauce, divided 8 oz cool whip (or homemade whipped cream) 1/4 cup mini chic chips for topping additional caramel sauce for topping chocolate sauce for topping Instructions 1. Spread coconut onto a baking sheet covered with parchment paper. Bake at 325 degrees for 5-10 minutes, or until lightly toasted. Set aside to cool. 2. Combine Oreo crumbs and melted butter and press into the bottom of a greased 9 inch springform pan. 3. Combine cream cheese, sugars and extracts in a large bowl and mix until smooth. 4. Fold in 3/4 cup of coconut flakes, vanilla wafer pieces and 1/4 cup caramel sauce into cream cheese mixture. 5. Add Cool Whip to cream cheese mixture and stir until combined. 6. Add batter to crust in 3 parts, adding a little more of the caramel sauce each time until you've used all of the caramel. Use a knife to swirl caramel around. Be careful to not put the knife through the crust. 7. Smooth out the top of the cheesecake. 8. Top cheesecake with remaining 1/4 cup coconut flakes, mini chocolate chips, chocolate sauce and caramel sauce. 9. Refrigerate until firm, 4-5 hours.
