I am making grilled salmon tacos with cilantro-lime slaw and sriracha aioli. I am using Paleo Wraps lined with a romaine leaf in place of soft tortillas... even though nothing can truly replace a warm soft tortilla for me. Yum!

I had Mexican rice with pinto beans and an over medium egg on top with toast (over medium eggs are my weakness and the only thing that stops me from being vegan...someday I may break it, but not today)

I cooked potatoes and onions and added the (chopped up) leftover peppers along with garlic and cayenne pepper.

I got the special from my work deli...

Chicken and veggies on pita with an awesome sauce...pasta salad for a side. It was lunch actually but I picked at it while I worked. Then one of the cooks had me try her bread pudding with coconut marshmallow topping

Then there were these tiny cheesecakes and fresh fruit in the break room. So...I did not go hungry today...

My quesadillas kinda fell apart and I burned mine, but the corn and pepper salsa was really good I ended up wolfing it down anyway, lol.

So I had pulled pineapple chicken boiled red potatoes, Hawaiian wild rice, salmon, kale salad, and pickled okra. Oh my friggin good.
