Colonel Sanders with slaw and green beans. I am fortunate that breading on chicken and fish doesn't push blood glucose up much because it's such a satisfying treat when one can't have bread, pasta, white potatoes and such.

Had--as in past tense
Today has been cool and rainy so it was a perfect night for Shepherd's Pie. The best part is I doubled the recipe and made two so one is chilling in the freezer for a future "heat and eat" dinner. I have such a hard time forcing myself to meal prep in advance but the rewards are well worth it.
Katniss~~ thinking about challenging myself to a "30 days of no take-out" but may wait for school to be out first. |

I had smoked oysters and two Wäsa crackers, topped with Mascarpone cheese, for breakfast.
I had an cup of home made veggie soup for lunch. Tonight I'm having a summer garden salad, trimmed with spring greens, French sheep feta crumble cheese, berries, walnuts and topped with Tumeric dressing and Tahini salad cracker bits. One Pork medallion baked in an Hawaiian glaze. Dessert will be an Crunchy chocolate Brownie bar by Think Thin. I gotta drink more water tho. I've only met half of my water quota for the day. |
