I had salad tonight with blue cheese dressing.

Although I have to confess - I love my dressing so much I probably should say I had some salad with my dressing.

Alas I was too full to have any melon.

Lemon/thyme tuna on a bed of spinach, chard and kale with a lemon/olive oil dressing.

Was going to have chicken medallions, but it’s too hot to cook. Probably won’t eat the chicken today and may need to toss it out.

Quick..toss the chicken in a skillet with olive oil, put a lid on it..
After it's cooked, freeze the cooked chicken and put the hot pan in the oven until it cools off.

My problem is I want to wait till I'm hungry before prepping and by then it's too doggone hot to do anything. Think I'll do just what you suggest and go and cook it now and can use it later today and tomorrow. Will add some italian herbs to the pan and a little lemon after it's done.

fall arrived while i was on my deck this afternoon...i watched the leaves blow off the trees and squirrels hiding hazelnuts ..it's time to bring out my favorite plaid blanket...i'm quite happy @ the moment....i made a

Bulgogi over sticky rice...my GF is vegan, but she had her daughter make it for me, she brought it to me. I have some for tonight as well. PLUS red cabbage slaw with edamame covered with ginger sesame seed dressing! YUM YUM YUM
