I made something delicious tonight. I chopped up a handful of spinach and cilantro, and threw it in my rice cooker with a frozen cube of ginger, four cloves of thinly sliced garlic, one diced carrot, half of a sliced vidalia onion, a few splashes of sesame oil and soy sauce, and used two cups of rice. I spread canola oil on parchment paper with my silicone brush, and baked cubed tofu at 350 degrees. Pete had hoisin on hers, and I had hoisin and hot sauce on my bowl.

I get so many ideas here!
As for tonight, after an entire afternoon at the laundromat (washer conked out), I picked up a pizza at my workplace's deli. It wasn't bad! Costco still comes in #1, but it's a fair distance from me.

Golabki Cabbage Rolls
Just spent the afternoon making Polish cabbage rolls ,,, they’re baking in the oven right now. Here’s the recipe I used, plus I used hemp hearts, brown rice & quinoa as my stuffing filler and chopped jalapeńos. I like my Polish cabbage rolls on the spicy side.

For dinner tonight I had homemade chicken stew leftovers with mashed cauliflower and green beans. The stew is a little high in calories, so as the base, I decided to try a low cal alternative that I have long heard of but never tried, hence the mashed cauliflower. I love cauliflower, and several people have told me over the years that it "tastes just like" mashed potatoes.
Folks, it does NOT taste just like mashed potatoes and it doesn't have the bulk of mashed potatoes either. It was good. As I said, I love cauliflower, but it really didn't go too well with the stew. I kind of had to turn my brain off to eat it. Bad news: I made up a second portion of everything into a frozen future meal before I tasted.it.
