Last night I made Socca for the first time in a long time. (A flat bread made of garbanzo flour with Mediterranean spices cooked in a little coconut oil on a cast iron skillet) I made little hand held size pieces and black bean soup to dip it in. Soooo good.

Last night...I made spicy beef stroganoff. Enough for two lunches as well.

I had a small baked cheese stuffed chicken breast, so I sliced it over some romaine and spinach salad. I topped it with jalapeno shredded cheese and blue cheese dressing.
Lemon Seltzer water. Cookies and milk later.

I've been experimenting with my Ninja Combi Meals cooker and air fryer, with mixed results. It's just getting timing and temperature (read: follow the directions) down pat.
The instructions said you can bake a cake in it, using the "Bake" function, so I had a box of cake mix hanging around and went for it! The cake swelled up so far it touched the heating units on the top and left a beautiful pattern of burn on the top. Other than that, it came out really well! The "combi meal" feature allows you to cook grain, vegetable, and a protein all together; quite nice with my busy days. (Question: How am I coming up to retiring and yet busier than ever?) All this to get back to dinner, the point of the thread: Tonight was chicken breasts, roast potatoes, and green beans a la Foodie. I put BBQ sauce on the chicken, which did char a bit, but once that was cut off, this was my best attempt thus far.
