I'm making stuffed chicken breasts with a mozzarella spinach filling. I'm not a fan of turning the oven on, but i will hike up the A/C temp and enjoy a cold beverage.

Rice pudding later.
Lots of ice cold water.

Bowtie pasta with dill yogurt sauce, roasted veggies, eggplant, red pepper, cherry tomato, zucchini and sliced sausage - what's not to love?! I had it at room temp, and it was pure bliss! Oh, and I made a little substitution, using capers instead of anchovies, because who needs anchovies, right, lol?

I found the recipe in my Chopped Cookbook.

Meatless meatballs casserole — which has cubed zucchini, minced garlic, jalapeño, baby teardrop tomatoes, organic Bella mushrooms, rosemary, and simmered to purrfection in a Parmesan white sauce with extra creamy cheese and a bit of canna oil.

Pinot Gris wine and homemade dinner rolls on the side.

Ube pancakes with sugar free syrup. I picked up the mix from Trader Joes. It is purple and tastes really good.

Ube is a purple yam used in Filipino cuisine. The mix also uses rice flour. Interesting, I had to try it. I'm going to get another box before it goes away.

- pecan waffle with butter and syrup (real butter because dinner was delivered)

Mango jalapeño Beef Jerky (8 ounces), a small homemade ‘cupcake’ Pistachio Pineapple Coconut breakfast cupcake (zero sugar, zero frosting), half cup of raspberries, and a spare handful of washed blueberries. Lots of filtered water served in a glass at room temperature (no ice). Maybe later I might have some miniature salmon street tacos (last night’s dinner leftovers). 👍
