I cooked some chicken breasts in a pot of homemade broth yesterday for use in several different meals. So today I cooked some rice in the leftover broth, added some of the shredded chicken and some steamed veggies and that was my dinner.

Slow Cooker meal......chicken breasts, black beans, fire roasted corn, rotel, packet of spicy ranch dressing (dry), and block of cream cheese. Can not wait to have this...smells yummy!

I sauteed up some portabella mushrooms, spinach and garlic (let it cool), mixed that in with ricotta, mozzarella, parm, an egg to bind, and seasonings. Rolled that up in some eggplant and covered with sauce. I guess you could say it's an eggplant rollatini.

I had a chipotle black bean burger on a multigrain sandwich thin and some sweet potato tots. I ate a bit too much. If I ate 6 less tots, that would have been perfect but it was the last of the bag and they were cooked and I didn't want to be wasteful.
I absolutely heard my mother's voice declaring that children were starving in China. I still haven't figured out how me eating two more bites helped those kids but she was persistent about it, bless her heart. |

I might have a tapeworm tonight...
Mix mash tonight! Mashed potatoes, mac 'n cheese, corn, and turkey kielbasa medallions, a few bites of black cherry frozen Greek yogurt and a couple ice cream bars. I'm noshing on sugar free black cherry Jello now.
With fat free whipped cream. So I put back all of the sugar that Jello took out.
