I'm not a medical professional by any stretch of the imagination, but it seems like you're on too restrictive of a diet to me when it comes to calories. Limiting carbs and fats are both important for diabetics....but you still need enough calories to get adequate nutrients, and so that your body doesn't decide there's a famine on and start hanging on to every fat cell. A dear friend of mine is pre-diabetic and weighs about 275 right now. The doctors put her on a 2,400 calorie plan and she's losing slowly.
