I made sauteed shrimp with bits of bacon and portobello mushrooms in a red sauce of mashed potatoes with a green salad. I loved it, my kids loved it and I have lunch tomorrow, as well. mmmm

I was insanely disappointed with my dinner. I tried Artisan Tofurkey Spinach Pesto faux sausage links. I sautéed them with a zucchini and squash blend of veggies and lots of veggie seasoning. Not good. I added shaved Asiago Romano Parmesan. Better but still not really good. I dumped it all on some loaded mashed potatoes. Almost okay. Then I pulled out the smoked bacon bits so the whole Meatless Monday thing was a fail. Actually, it failed when I added the potatoes since that has bacon in it too.
I will not be attempting this dish again once it's gone. |

I came home from work to make homemade pizza on flatbread. Sauce, sliced sweet orange peppers,mushrooms, sweet Italian sausage and loaded with mozzarella and parm cheeses. Quite tasty I say!

I honestly haven't a clue...I know I want a chopped green salad with avocado, and berries of some sort, that's as far as I've gotten regarding this evening's dinner. Oh, I have watermelon for dessert.

After doing some grocery shopping I have decided on a chopped green salad loaded with all sorts of leafy greens, blueberries, avocado, and a few sliced strawberries. I also have some crackers made from seeds, and a tin of fish steaks in Louisiana hot sauce if I am still hungry after the salad. Ice cold watermelon for dessert later.

I stopped for a super late lunch at a brewery in Rutherfordton...
I had a turkey, avacoado, Colby, sandwich with lettuce, tomato and some purple onion on very pretty sour dough bread... They didn't forget the pickle...and I had pasta salad on the side... Water to drink Later I meandered to find a coffee and ended up with 2 yummy chocolate chip cookies for dessert/ the ride home....
