I made a supper tonight which is super simple to make and it consists mostly of vegetables and meatless 'meat balls'. I used a 'rice' which is not rice but the 'rice' is made from vegetables. I also used zucchini squash (cut up in tiny sections), two scallion bulbs, grated garlic (1 clove) and simmered it until it was cooked, then added organic tomato paste (one small 8 ounce can) and a bit of filtered spring water and let it meld together, after I turned the heat off.
I also have freshly grated Romano cheese, so I'm sprinkling a tiny bit on top. Water to drink, then a cup of herbal tea before bedtime.

Sliced off bits of bbq chicken on top of boiled rice, drowned in a bottle of korma Indian cooking sauce. May not be fancy but I'm quite convinced 90% of the world doesn't eat this well. So, I'm grateful.

We had some good fresh Halibut from our local fish monger. I breaded it in cornmeal and old bay seasoning and gave it a light saute with olive oil. Side of tomato avocado cucumber salad. And a cold beer because we worked outside in the hot sun gardening all day and it felt right.
