I soaked tiny navy beans overnight because I am making a Navy Bean soup with parsnips, carrots, minced garlic and a smidge of coconut oil, fresh rosemary and a skitch of ground cloves and cinnamon.

It's been slow cooking since early this morning and it smells so good.

For dessert, we've got some fresh fruit to snack on (Sierra figs, Italian prunes and currants) and some soft creamy smoked gouda to pair off with the fruit.

I'm going to try to air fry some tofu today. I'm about ready to marinate it and I found a sweet heat glaze recipe to put over it.
Fresh asparagus. ( to me, asparagus is definitely an Easter dish. It's in season)
Maybe, I'll devil some eggs??

Later, strawberries. Again, it's the season and we always had strawberries on Easter.

Just got home from Easter gathering. We havent been all together since over a year ago. It was salmon.shrimp,ribs,ham and every potluck item you can think of. The best was all the smiles laughter and just having a good time!

Canadian Bacon and pineapple pizza, double everything. I don't know why they even call it Canadian bacon pizza, I never saw pizza anything in any of my trips there. Now Nanaimo bars that's a different story, they're everywhere. I don't think you could truly be Canadian if you haven't tried one. Not even if you were born and raised there and have lived there there all your life. Everyone makes them a little different and I've never had a bad one so I guess it's just each is good in its own unique way. Now days you'll find them all over the place, especially in Seattle. Though I'd say in Seattle they deserve an E for effort, really to earn an A+ you've got to go driving up through Canada. Anyway back to topic – pizza, coffee and the last of the berries with some cream for dessert, but I'm still hungry. Carbs will do it you, every time.
