Last night was girls night with one of my friends... we sipped strawberry/mango margaritas & munched on chips, salsa, queso & guacamole

I stopped at the Carniceria on the way home from work. picked up arrachera, tomatoes, jalapenos, cilantro, onions, garlic and corn tortillas. Just finished dicing up, tomatoes, onions, jalapenos and cilantro. Mixed it all together in a bowl and set it in the fridge. I'll do the meat up later when my stomach hollers hungry to me.....so, guess what I'll be having for dinner tonight? Mmmmmmmmm

I ate 5 small steak tacos with my Pico de Gallo. I only cooked up the meat I knew I would eat.
It means I can have more of them for dinner tomorrow. Nothing better than knowing what the ingredients are in the food you're eating.
